We’re looking to welcome a creative, curious, and motivated Sous Chef in the relaxed but lively Table Nineteen areas.
An operation of this caliber requires a hands-on Sous Chef who will join our passionate Nicklaus North Team. The successful candidate reports to the Executive Chef , is authentic, resourceful, realizes the importance of exceptional communication, re-thinks the status-quo, is humble and creative in their approach, and is disciplined about holding themselves accountable. Candidates must have strong collaborative skills, be constant learners, lead through influence and passion, operate with positive intent, and enjoy investing into a high-functioning Team.
WHAT YOU'LL GET TO DO
- Assist the Executive Chef in planning menus considering Guests, marketing conditions, dish popularity, and cost.
- Cook and directly supervise the cooking of dishes, maintaining a positive and professional approach.
- Monitor controls to minimize waste and loss.
- Help schedule and co-ordinate the kitchen Team Members to ensure that food preparation is economical and technically correct and consistent according to the menu syllabus.
- Work with the Executive Chef to develop recipes and techniques for dish preparation and presentation that help to ensure consistent high quality and to minimize costs; exercise portion control over all items served.
- Work cross-functionally with the Food & Beverage Services Manager (and Assistant) and Event Managers/Coordinators to assure that culinary production consistently exceeds Guest expectations.
WHAT YOU BRING
- Solid a la carte culinary experience with an understanding of best practices; banquet experience and Red Seal is an asset.
- Experience leading a kitchen Team.
- Exceptional problem solving, communication, and multi-tasking skills.
- Must be able to work efficiently in a fast-paced environment and be able to maintain organization with a positive attitude.
